I plan to be a regular here, so no problems with contributing photos and vids when I get to that stage.
Just looking through our local regulations and requirements. Fortunately I'm on a few acres here and should get plenty of practice and flights whenever I want.
Any recommendations on any video courses/training packages out there in the interweb worth looking at??

Welcome here.
Best way to start learning controlling your drone is by practicing flying figure eights at no more than 10 m high.....well away from trees and obstacles of course.
When I started flying my MP I've had much good advise from a guy with a YT page.
It's called Tomstechtime.
He is a German airline pilot and also a excellent drone pilot.
Has has posted many tutorial video's and also reviews.
Check him out, you'll learn a great deal, I did!
I'm curious to see you pics/video from your part of the world.
